Cherries dried in a dehydrator: the simple method to keep their taste

Meilleure machine sous vide professionnelle

To make cherries dried in a dehydrator, choose ripe but firm fruits, pit them, cut them in half, then dry them at 55-60°C for approximately 10 to 18 hours. The good result is not a brittle cherry: it must remain soft, dense and without visible juice, like a soft dried fruit.

The recipe for dried cherries in a dehydrator

Success depends above all on pitting and cutting. A whole cherry dries very slowly; an opened cherry dries more regularly and retains its taste better.

Ingredients

  • 1 kg fresh cherries, ripe but still firm
  • 1 tablespoon lemon juice, optional
  • 1 pinch of fine salt, optional to enhance the taste
  • No sugar needed if the cherries are ripe

Step by step steps

  1. Sort the cherries: remove damaged, too soft or cracked fruit.
  2. Wash quickly under cold water, then dry very carefully in a clean cloth.
  3. Stem and pit all the cherries. A pitter saves a lot of time.
  4. Cut large cherries in half. Small ones can remain open after pitting, but half-cherries dry better.
  5. Add the lemon if you want to limit browning and keep a brighter note.
  6. Arrange cut side up on the trays, in a single layer, without overlapping.
  7. Set to 55-60°C and start drying.
  8. Check from 10 a.m., then extend in increments of 1 hour if the center remains moist.
  9. Let cool completely before storage to avoid condensation.

Final benchmark: the cherries should be wrinkled, soft, concentrated in taste, but should no longer release juice when you squeeze them lightly.

Verdict: For a reliable result, cut the cherries in half. It is the best compromise between drying time, taste and storage safety.

Which cherries to choose for the dehydrator?

The best cherries to dry are ripe, fragrant and still firm. Too soft, they release a lot of juice and stick to the trays; not ripe enough, they give an acidic and less delicious result.

  • Sweet black cherries: intense taste, excellent snack result.
  • Burlat: very fragrant, but watch out if it is very juicy.
  • Firm bigarreaux: good hold, practical for regular half-cherries.
  • Morello cherries: more acidic, interesting for pastries, granola or sweet-salty mixtures.

Practical advice: if your cherries are very juicy, pat them dry after pitting and space the fruit out further on the trays. You will gain in regularity.

How to use and store dried cherries?

Dried cherries keep best when they are cooled, packaged dry and checked for the first few days. If condensation appears in the jar, they were not dry enough.

You can use them in:

  • homemade granola or muesli;
  • cookies, cakes, brioches or cereal bars;
  • an appetizer mix with nuts and seeds;
  • a mixed salad with cheese, arugula or nuts;
  • a sauce or garnish for white meat, duck or dessert.

Mistakes to avoid with dried cherries

Cherries are rich in juice: they require more care than apples or bananas. The most frequent errors come from too humid fruit or too rapid storage.

  • Do not pit: drying becomes very long and irregular.
  • Add the whole cherries: the heart may remain moist.
  • Overload the trays: the air circulates poorly and the juice sticks.
  • Store while still warm: condensation softens the fruit.
  • Confuse dry and hard: a well-dried cherry can remain soft.

Dehydrator Dried Cherries FAQ

Should you pit cherries before dehydrating?

Yes. Pitting accelerates drying and prevents a moist core from remaining trapped around the core.

Should dried cherries be hard?

No. They can remain soft if they no longer release juice and show no moisture in the center.

Can you dry frozen cherries?

Yes, but they must be defrosted, drained and dried well before placing them on the trays.

How long to store dried cherries?

In an airtight container, dry and away from heat, they will keep for several weeks if they are sufficiently dehydrated.
