Description

Professional low-temperature sous vide cooking

All-in-one low-temperature cooking: 0.1°C precision and complete autonomy for consistently outstanding results.

For demanding chefs and professional development kitchens, an immersion circulator is not always the best solution due to heat loss and continuous evaporation. This professional GN sous vide cooker is a fully insulated water oven engineered for exceptional temperature stability. No more makeshift plastic containers: this self-contained cooking station is made from high-quality 18/8 stainless steel.

The mise en place advantage: set it and leave it
Unlike an open container, this cooker features an insulated tank and a tight-fitting lid with a silicone seal. The result is no water evaporation, even during 72h cooking cycles. There is no need to monitor the water level: the appliance operates autonomously throughout the process.

Why choose a GN water oven instead of an immersion circulator?

1. Internal circulation and even temperatures

This is far more than a conventional bain-marie. An integrated silent pump circulates the water to eliminate cold spots. Whether you prepare 2 or 20 portions at once, the temperature remains consistent throughout the tank to within one tenth of a degree (0.1°C).

2. Significant energy savings

The insulated, double-wall stainless steel construction minimises heat loss. It uses considerably less electricity to maintain the set temperature than an immersion circulator placed in an uninsulated container, while still heating quickly and remaining stable.

3. Practical operation and HACCP hygiene

The all-stainless-steel construction and rounded corners simplify cleaning. A key operational benefit is the safety drain tap on the front, which lets you empty the tank (up to 24L) directly into a sink without lifting it or risking burns.

Frequently Asked Questions About Sous Vide Cooking

How does low-temperature sous vide cooking work?

Food is placed in a sealed bag and then immersed in a water bath maintained at a precise temperature. Unlike direct cooking, the heat is gentle and consistent, helping to cook food evenly, provide better control over texture and reduce moisture loss.

What is the difference between an immersion circulator and a sous vide cooker with a built-in water bath?

An immersion circulator attaches to a compatible pot or container. It is compact, easy to store and allows you to adjust the volume of water to the amount of food being prepared. A cooker with a built-in water bath is an all-in-one solution: its integrated container makes setup easier and is better suited to frequent cooking, larger quantities or professional use.

Do you need a vacuum sealer to cook sous vide?

A vacuum sealer is recommended to remove air from the bag, keep food properly submerged and achieve more consistent cooking. Always use food-safe bags designed for sous vide cooking and the intended temperature. Vacuum sealing and cooking are two separate steps: the vacuum sealer seals the bag, while the cooker heats and regulates the water bath.

How do you choose the cooking temperature and time?

The temperature depends on the food and the desired result, while the cooking time varies according to factors such as its thickness, quantity and starting temperature. A higher temperature does not always replace a longer cooking time. For reliable results, follow a cooking chart suited to the food and observe food hygiene and safety recommendations.

How can you maintain even cooking for several hours?

Observe the minimum and maximum water levels specified for your appliance. The bags must remain submerged without blocking water circulation. For long cooking times, covering the container helps reduce evaporation and heat loss. Check regularly that the water level remains sufficient, especially when using an immersion circulator.
